Instructions

1.Preheat oven to 375°F (190°C).
2.In a bowl, whisk together flour and sugar. In another bowl, whisk together milk and egg.
3.Add milk mixture to dry ingredients, whisking until smooth. Stir in cranberries, apples and walnuts; set aside.
4.Place a 12-inch (30 cm) cast-iron skillet or ovenproof frying pan over low heat; melt butter. Remove from heat; stir in brown sugar, cinnamon and nutmeg.
5.Spread apple mixture in skillet; pour batter over top.
6.Bake pancake in preheated oven for 25 to 30 minutes or until set and golden brown.
7.Cut pancake into wedges to serve.
