Ingredients

5 tablespoons sugar
5 tablespoons fish sauce
1/4 cup water
3 tablespoons fresh lime juice
2 tablespoons minced peeled fresh ginger
2 garlic cloves , minced
2 Thai chiles or 1/2 large jalapeno chile , with seeds , minced
1 small carrot , peeled , but into matchstick size strips
4 halibut fillets
3 tablespoons vegetable oil , divided
1 shallot , thinly sliced
3/4 lb Baby Spinach
Grilled Halibut With Spinach and Spicy Thai Chiles is a healthy and delicious seafood dish that features bold flavors and tender, flaky fish. The dish is easy to prepare and can be cooked on a grill pan or outdoor grill. The marinade features a combination of sugar, fish sauce, lime juice, ginger, garlic, and spicy chiles that infuses the fish with flavor and tenderizes it, making it a perfect centerpiece for any meal. Instructions

1.In a small bowl whisk together sugar, fish sauce, water, lime juice, ginger, garlic and chiles until sugar is dissolved.
2.Transfer the mixture to a large resealable plastic bag and add the carrot strips.
3.Place the halibut fillets in the same bag and seal it tightly, gently tossing to coat.
4.Let the fish marinate at room temperature for 30 minutes.
5.While the fish is marinating, heat 1 tablespoon of the vegetable oil in a large skillet over medium heat.
6.Add the sliced shallot and cook until softened for about 3-4 minutes.
7.Add the baby spinach to the skillet, season with salt and pepper, and cook for about 2-3 minutes until wilted.
8.Heat a grill pan or outdoor grill to medium-high heat.
9.Remove the halibut from the marinade and discard the remaining marinade.
10.Brush both sides of the fish fillets with the remaining 2 tablespoons of vegetable oil and season with salt and pepper.
11.Grill the halibut for 4-5 minutes per side or until the fish flakes when tested with a fork.
12.Serve the grilled halibut over the spinach and top it with the cooked shallots and carrots. Enjoy!
