Instructions

1.Thoroughly clean the snails, removing any dirt and debris. Soak in cold water for one hour, then rinse in cold water again.

3.In a large pot, heat the olive oil over medium-high heat. Add the snails and cook until they start to brown, about 5 minutes.
4.Add the grated onion, chopped parsley, and chopped tomatoes to the pot with the snails.
5.Stir in the red wine vinegar or more chopped tomatoes, and simmer for 20 to 30 minutes.
6.Serve the snails hot, garnished with parsley or oregano and lemon juice.(optional)
