Ingredients

1 liter low-fat milk
3 -5 saffron strands
1/4 teaspoon citric acid
2 teaspoons cornflour
1/2 teaspoon cardamom powder
4 packets sugar substitute
1 teaspoon pistachios , chopped ( optional )

Instructions

1.Pour milk in a heavy bottomed pan and bring it to boil. Once it starts boiling, simmer the gas flame and keep stirring it until it thickens slightly and reduces to 1/3 of its original quantity.
2.Mix saffron in a tablespoon of warm milk and add it to the reduced milk along with citric acid. Keep stirring it on low flame. You will see the milk thickening more as you add citric acid. Stir it well.
3.Mix cornflour in 1 tablespoon milk and add to the pan while stirring. Add cardamom powder and sugar substitute and continue stirring for some more time until it gathers in one lump.
4.Take it off heat and let it cool down to room temperature.
5.Knead it with your palm to make it smooth and give it a round shape. Flatten a little, sprinkle chopped pistachios and saffron strands on it.
6.Enjoy your soft and yummy Malai Peda.
