2 1/2 lbs piece of rolled topside beef
8 slices streaky bacon , chopped
1 large onion , chopped
2 garlic cloves , crushed
1 tablespoon plain flour
1/4 pint red wine
1/2 pint beef stock
1 bouquet garni
4 tomatoes , skinned and chopped
salt and pepper

Instructions

1.Preheat the oven to 150°C/300°F/Gas Mark 2.
2.Season the beef all over with salt and pepper.
3.In a large casserole dish, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set it aside on a plate.
4.In the same pan, brown the beef on all sides over high heat, then remove from the pan and set it aside on a plate.
5.In the same pan, add the onion and garlic, and cook for a few minutes until they start to soften.
6.Whisk the flour into the pan and cook for 1-2 minutes, stirring constantly.
7.Slowly stir in the red wine, beef stock, and bouquet garni, scraping up any brown bits from the bottom of the pan.
8.Add the chopped tomatoes and return the beef and bacon to the pan.
9.Cover the pan with a tight-fitting lid and place it in the oven for 2 1/2 - 3 hours, or until the beef is tender and falls apart easily.
10.Remove the bouquet garni and skim off any fat from the surface of the gravy before serving.
