Ingredients

2/3 cup mashed potatoes
12 ounces ground lean pork
1/2 cup onion , finely chopped
2 garlic cloves , minced
1 stalk celery , finely chopped
1 cup mushroom , diced
1/2 cup chicken stock
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon thyme
1/4 teaspoon ground cloves
1/4 teaspoon cinnamon
1 bay leaf
3 cups all-purpose flour
1 teaspoon salt
1/2 cup butter or 1/2 cup margarine , cold
1/2 cup lard , cold
1 egg
2 teaspoons vinegar

Instructions

1.Boil potatoes until fully cooked and mash them.
2.Meanwhile, in a skillet over medium heat, cook pork, onions, garlic, celery, and mushroom until the meat is no longer pink.
3.Drain the fat and mix in chicken stock, salt, pepper, thyme, cloves, cinnamon.
4.Add in the bay leaf and bring the mixture to a boil and then reduce the heat to low and let it simmer for 30 minutes.
5.Remove bay leaf and add mashed potatoes into the mixture. Mix well.
6.Preheat oven to 375°F.
7.In a large bowl, mix flour and salt. Add butter and lard and mix until it resembles coarse meal.
8.In a separate bowl, whisk together egg, vinegar, and enough ice water until it becomes one cup.
9.Add the liquid mixture to the flour mixture until it forms into a ball.
10.Roll dough out and then cut it into circles of three to four inches.
11.Place the filling in the circle and fold it into a half moon shape, pressing edges together.
12.Bake for 20 to 25 minutes, or until golden brown.
13.Serve hot and enjoy!
