Ingredients

1 small onion ( diced )
1 teaspoon cumin ( coarsely grounded )
1 can Rotel tomatoes & chilies ( mild works best )
1 can black beans
2 garlic cloves ( grated or minced )
2 -3 tablespoons salsa
4 slices pickled jalapeno peppers
4 teaspoons oil ( i prefer corn or vegetable )
1 ounce sazon goya with coriander and annatto
10 soft tortillas ( small size )
1 package shredded Mexican blend cheese ( 2 packs if you love cheese )
Delish Mexican Casserole is a perfect meal for a busy night. Made with simple and easy to find ingredients, this dish is budget-friendly and can be assembled in just 30 minutes, including the baking time. Instructions

1.Preheat the oven to 375°F.
2.In a large skillet, heat oil over medium heat. Add onions and cook until soft.
3.Add grated garlic and cumin, and cook until fragrant.
4.Add the can of Rotel tomatoes & chilies, black beans, sazon goya, and salsa, stir and let simmer about 5 minutes.
5.In an 8x8 inch baking dish, spoon a small amount of the mixture to lightly cover the bottom.
6.Put one layer of tortillas over the mixture, then spoon a layer of the mixture over top of the tortillas, and sprinkle with some of the shredded cheese. Repeat layers with remaining ingredients.
7.Top with jalapeno peppers and remaining cheese.
8.Cover and bake for 20 minutes. Uncover and bake 5 minutes longer or until cheese is melted.
9.Let it cool for a few minutes before serving.
