Instructions

1.In a large bowl, whisk 3 cups of water, 1/3 cup kosher salt, 3 tbsp brown sugar, and 2 tbsp five-spice powder until the salt and sugar dissolve.
2.Submerge the chicken in the brine and refrigerate for at least two hours, or up to overnight.
3.Preheat the oven to 350°F.
4.In a small saucepan, whisk together the hoisin sauce, sesame oil, ginger, 1 1/2 tsp of brown sugar, soy sauce, 1/4 tsp five-spice powder, and 1/2 cup water over medium-high heat, bringing the sauce to a boil.
5.Remove from the heat and let cool.
6.Remove the chicken from the brine and pat dry with paper towels.
7.Coat a foil-lined baking sheet with cooking spray.
8.Bake the chicken for 18-20 minutes, or until the internal temperature of the thickest part of the chicken reaches 165°F.
9.Brush the hoisin sauce over the chicken and bake for an additional 5-10 minutes, or until the sauce is heated through.
