Ingredients

1/2 cup boiling water
1 cup milk

Instructions

1.Preheat oven to 180 degrees Celsius.
2.In a bowl, sift the flour, baking powder and baking soda. Add sugar and salt, mix well.
3.In another bowl, beat the egg until light. Add vinegar, milk, apricot jam, butter, and vanilla extract. Mix well.
4.Add the egg mixture to the flour mixture and whisk well until smooth. Add boiling water, stir well.
5.Grease a 20cm by 20cm baking dish and pour the mixture into it.
6.Place the dish in the oven and let it bake for 30 to 40 minutes until a toothpick inserted in the middle comes out clean.
7.Once ready, remove from oven and let it cool for 5-10 minutes before serving.
